At the end of a busy day, the last thing I feel like doing is peeling vegetables, chopping meat and preparing a delicious sauce. This is why I absolutely love this chicken bake recipe with Birch and Waite green goddess dressing. It’s the definition of gentle nutrition, and I can throw everything on the tray (using whatever vegetables I have in the fridge), coast everything in the gorgeous green sauce packed with flavour and pop it in the oven while I jump in the shower ready to slump on the couch and decompress.
How long does green goddess dressing last?
This Birch and Waite dressing lasts for up to 8 weeks when stored in the fridge. If you’re making your own green herby dressing it will last up to 2 weeks.
Green goddess dressing recipe
This recipe is just one idea to use the delicious green goddess dressing. You could also use it in fresh salads, on roast potatoes or a potato salad, or mixed in with mayonnaise for a zesty twist on a crispy chicken burger.
How to make a chicken bake
This is honestly one of the easiest recipes ever. Either use a whole raw chicken and break it down into separate pieces or buy 4 Maryland portions. Add the chicken to a lined baking tray and any vegetables you like. I personally love tiny potatoes for a carb fix and like using up any leftover limp-looking veg at the bottom of my fridge. Lastly, coat everything with the green dressing, season with salt and pepper and a generous glug of olive oil and bake in a preheated oven until the chicken is cooked and the potatoes are soft on the inside and crispy on the outside!
For an extra veg hit, I like to serve this with some freshly cooked greens, or if I need more carbs, I add a slice of sourdough to soak up the herby juices.

Chicken bake with green goddess dressing
Equipment
- 1 baking tray
Ingredients
- 1 raw chicken (or 4 x chicken Maryland's)
- 500 g small potatoes washed and cut into halves
- 8-10 stems cauliflower leaves, silverbeet or other hardy green
- 1/2 bottle birch and waite green goddess dressing
- Pinch salt & pepper
- drizzle olive oil
Instructions
- Place chicken, potatoes and vegetables of choice onto a lined a baking tray and cover with green goddess dressing, salt, pepper and olive oil - use your hands to coat everything in the wet ingredients
- Transfer to a pre-heated oven and bake for 20-25 mins until the chicken is cooked and the potatoes are soft
- Serve with extra vegetables or enjoy on it's own
