Equipment

  • 1 baking tray

Ingredients

  • 1 raw chicken (or 4 x chicken Maryland's)
  • 500 g small potatoes washed and cut into halves
  • 8-10 stems cauliflower leaves, silverbeet or other hardy green 
  • 1/2 bottle birch and waite green goddess dressing
  • Pinch salt & pepper
  • drizzle olive oil 

Instructions

  • Place chicken, potatoes and vegetables of choice onto a lined a baking tray and cover with green goddess dressing, salt, pepper and olive oil - use your hands to coat everything in the wet ingredients 
  • Transfer to a pre-heated oven and bake for 20-25 mins until the chicken is cooked and the potatoes are soft 
  • Serve with extra vegetables or enjoy on it's own

Notes

Feel free to add extra vegetables to the tray or swap potatoes for sweet potatoes or corn
